And the winner is…

I love having giveaways, but I HATE only having one winner! I wish I could just give away a copy of Vegan Brunch to everyone! Even if you didn’t win, you can get Vegan Brunch on sale on Amazon right now! It’s such a good price, that I would go ahead and order another cookbook (Vegan with a Vengeance, The Vegan Table, Eat Drink and be Vegan, Vegan lunchbox – all good) or something like “The China Study” (which is also on sale). That way you get the free shipping!

There were so many tasty looking recipes in the comments! So I’ve decided to post all of the recipes, and a few more for your vegan brunches!

Sweet Potato Puree? (btw Eileen you crack me up) :) And vegan cooking takes a little time to learn, but can be lots of fun, stick with it!

Stab & nuke a sweet potato for like, EVER (15 minutes usually-til you can stick a fork/knife to the center easily)
Put in Vitamix with 1/2 cup water, and a tablespoon of Sugar in the Raw or some vegan-approved sugar.
Turn on low, up the dial from 1 to 10, then flip to High for about 20 seconds and viola!!
OM NOM NOM!
If ya don’t have a Vitamix, best to remove the skin before you throw the potato in a regular blender.

Blood Orange Roasted Tomato Asparagus

As you might have caught – the winner is Barbara who wrote this:

I would make this amazingly rich lemon poppy seed cake http://gonepie.com/blog/. I would bake it as a bundt cake.
And I would serve it with lots of strawberry coulis (made with agave). And some lovely vegan mango mimosas! Spring brunch.

My husband picked the winner by using some geeky skills. There were 26 eligible entries, and the winning number was 12! (Barbara’s comment)
