It’s less than a week away. No worries, I’ve got some great recipes for Thanksgiving this week! First, my friend Ryan over at The Veg Blog has a post about Thanksgiving definitely worth checking out.. you can find it here.

This year we’ll be going to a vegan potluck, which I am really excited about. If you are alone for the holidays or you just have one or 2 relatives coming in – check out meetup.com to see if there are any vegan groups near you doing a vegan thanksgiving. This way you get to sit around a table of food that you can eat and enjoy with people that won’t look at you weird for not partaking in what most consider a ‘traditional’ meal. Make your own, new traditions, with a few happier, healthier twists.

Raw Thanksgiving:

Autumn Salad

from Ani’s raw food kitchen:
Cranberry Coconut Almond Cookies
makes 12 servings

1 1/2 cups pitted Medjool dates
1 cup almonds, process into chunks
1/2 cup cranberries
1/2 cup shredded coconut
1 Tablespoon vanilla extract, alcohol free
Place all ingredients in a large mixing bowl. Use your clean, washed hands to mix well. Form batter into balls, or press into cookie cutters to make shapes. Will be devoured immediately.

Oat Chocolate Chip Cookies
makes 21 x 2 Tablespoon sized cookies

1 1/4 cup raisins
1/2 cup pitted Deglet Nour dates (drier dates than Medjool)
2 cups oats
4 teaspoons agave or honey
2 teaspoons cinnamon
pinch of salt, to taste
1/2 cup cacao nibs, or chocolate chips (cooked)
Place raisins and dates in your food processor and process into small pieces. Add oats, agave or honey, cinnamon, and salt. Process to mix well. Empty into a mixing bowl and add chocolate chips. Mix well. Use a 2 Tablespoon scooper to portion cookies. Enjoy immediately, or chill before serving for firmer texture.
